Maqui Berry Chia Pudding
Ingredients:
- 1/2 cup of chia seeds
- 2 cups of unsweetened almond milk
- 1 teaspoon of vanilla extract
- 1 tablespoon of maple syrup or honey
- 2 tablespoons of maqui berry powder
- Fresh berries and sliced almonds, for topping
Instructions:
- In a large mixing bowl, whisk together the chia seeds, almond milk, vanilla extract, maple syrup or honey, and maqui berry powder until well combined.
- Let the mixture sit for 5-10 minutes, stirring occasionally, until it thickens and the chia seeds have absorbed the liquid.
- Once the mixture has thickened, transfer it to a jar or container with a lid and refrigerate for at least 2 hours, or until it has set.
- When ready to serve, top the pudding with fresh berries and sliced almonds.
