Maqui Berry Chia Pudding


  • 1/2 cup of chia seeds
  • 2 cups of unsweetened almond milk
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of maple syrup or honey
  • 2 tablespoons of maqui berry powder
  • Fresh berries and sliced almonds, for topping


  1. In a large mixing bowl, whisk together the chia seeds, almond milk, vanilla extract, maple syrup or honey, and maqui berry powder until well combined.
  2. Let the mixture sit for 5-10 minutes, stirring occasionally, until it thickens and the chia seeds have absorbed the liquid.
  3. Once the mixture has thickened, transfer it to a jar or container with a lid and refrigerate for at least 2 hours, or until it has set.
  4. When ready to serve, top the pudding with fresh berries and sliced almonds.
