Australian Bee Pollen Granola
Ingredients:
- 3 cups rolled oats
- 1/2 cup sliced almonds
- 1/2 cup chopped walnuts
- 1/2 cup unsweetened shredded coconut
- 1/4 cup coconut oil, melted
- 1/4 cup honey
- 1 tsp vanilla extract
- 2 tbsp bee pollen
Instructions:
- Preheat your oven to 180°C.
- In a mixing bowl, combine the rolled oats, sliced almonds, chopped walnuts, and unsweetened shredded coconut.
- In a separate bowl, mix together the melted coconut oil, honey, and vanilla extract.
- Pour the wet ingredients over the dry ingredients and mix until fully combined.
- Spread the granola mixture evenly on a baking sheet.
- Bake for 20-25 minutes, stirring occasionally, until golden brown.
- Remove from the oven and let cool completely.
- Sprinkle bee pollen over the cooled granola.
- Serve with almond milk or yogurt.
